Sourced from the Jiménez family plantation in the San Luis Potosi region in Mexico. José Luis cultivates the Cardona varietal of prickly pear cactus, locally known as tuna. Harvest in this region begins in late August and continues through November. Desired for their purple skin and pinkish-purple flesh, the Cardona has soft seeds and mostly bitter-sweet flavor profile. The pulp of the prickly pear is sweet and moist with an aroma and flavor similar to a combination of the tastiest tropical and subtropical fruits, strawberry, watermelon, honeydew melon, fig, banana, with a natural tartness similar to a maraschino cherry.
