Located in the produce mecca of Sangjui is the Nakdong River basin, which produces 70% of the Persimmon grown state-wide. Responsible for these gorgeous fruits is third generation farmer Young-chul Soung. He cultivates the national fruit of South Korea, the Fuyu Persimmon 1300ft above sea level. “Chucheok” symbolizes the harvest and ancestral thanks and giving here. The Persimmon is a centerpiece of this tradition and markets all over the country will flood with these beautiful orange fruits. The Fuyu variety of Persimmon is the sweeter of the two main varieties and is a fundamental fruit to this revered culture. Prized for it’s beautiful firm pumpkin colored tannic skin, fibrous pulp and incredible flavor. The flavor profile is truly unique, emulating characteristics of sweet tomato, papaya and butternut squash.
