Kumquat Puree Spec Sheet
Kinkan or Kumquat, more literally “Golden Orange”, are sourced from the produce mecca Miyazaki in southern Japan along the Pacific coast. Although Kumquats are often lumped into the citrus family, they are actually Fortunella. The variety grown in this region is the Marumi, or round and can be identified by their rounder appearance. Loved for their bright deep orange color and diminutive size, they can be eaten without peeling. Biting into a Marumi Kumquat for the first time is an incredible experience. At first, sweet as your teeth punctures the skin, then an explosion of tart flavor rushes over your taste buds and causes you to pucker and even might make your eyes water. The flavor can be described as a rush of sweet, tart tangerine and meyer lemon.
